Juicy Oven-Baked Chicken Skewers (Frigărui de Pui)

A quick and flavorful way to use up chicken breast — these skewers pair perfectly with mashed potatoes and come with a delicious parsley-parmesan oil drizzle!

Ingredients
    For the Chicken Skewers:
  • 3 chicken breast pieces, cut into equal-sized chunks
  • Salt, to taste
  • Black pepper, to taste
  • Sweet paprika (or hot paprika/chili flakes), to taste
  • Garlic powder, to taste
  • Juice of ½ lemon
  • 1 tablespoon sour cream (or yogurt)
  • 1 teaspoon tomato paste
  • 2-3 tablespoons olive oil (or any oil you have)
  • ½ teaspoons dried oregano
  • Optional trick: Soak chickpeas in water and use on skewers with the chicken to prevent drying
  • For the Drizzle Sauce:
  • 10-20 grams fresh parsley, finely chopped
  • 2-3 tablespoons olive oil
  • 10-20 grams grated Parmesan cheese
  • A pinch of paprika for color
Instructions
  1. Prep the Chicken:
      • Cut the chicken breasts into evenly sized cubes (not too big, not too small) for even cooking.
      • Place them in a large bowl and season with salt, black pepper, paprika, garlic powder, oregano, lemon juice, sour cream (or yogurt), tomato paste, and olive oil.
      • Mix well until the chicken is well coated.
  2. Soak the Chickpeas (Optional):
      • If using chickpeas, soak them in water for a few minutes. This trick helps them stay tender and not dry out in the oven.
  3. Assemble the Skewers:
      • Thread the marinated chicken onto skewers (with or without chickpeas).
  4. Bake:
      • Line a baking tray with parchment paper and place the skewers on it.
      • Bake in a preheated oven at 200°C (392°F) for 10 minutes, flip them, and bake for another 10 minutes.
      • Optionally, you can grill them instead.
  5. Prepare the Drizzle Sauce:
      • Mix together chopped parsley, grated Parmesan, olive oil, and a pinch of paprika.
  6. Serve:
      • Drizzle the sauce over the hot skewers and serve with mashed potatoes or your favorite side dish.
