Juicy Chicken Sandwich with Garlic Yogurt Sauce

Ingredients
    For the chicken:
  • 2 chicken breasts, thinly sliced
  • Salt (to taste)
  • Black pepper (to taste)
  • Dried chili (to taste)
  • Sweet paprika (to taste)
  • 2 tablespoons olive oil
  • Juice of ½ lemon
  • For the sandwich:
  • 3 tomatoes, thinly sliced
  • Salt (to taste)
  • A little olive oil
  • 4 slices of seeded bread (or any bread of choice)
  • Mozzarella, sliced (or any cheese you prefer)
  • For the garlic yogurt sauce:
  • 3 cloves of garlic, grated
  • Salt (to taste)
  • Black pepper (to taste)
  • 2 tablespoons Greek yogurt
  • Fresh parsley, chopped
Instructions
  1. Prepare the chicken: In a bowl, season the thinly sliced chicken breast with salt, black pepper, dried chili, sweet paprika, olive oil, and lemon juice. Rub the seasoning well into the meat.
  2. Heat a little oil in a pan over medium heat. Add the chicken and cook until golden brown, then flip and cook for another 5 minutes. Once done, remove from the pan and set aside.
  3. Prepare the tomatoes: Slice the tomatoes thinly, season them with salt, and drizzle a little olive oil over them.
  4. Make the garlic yogurt sauce: In a small bowl, mix the grated garlic with salt and black pepper. Add Greek yogurt and chopped parsley, then mix well.
  5. Assemble the sandwich: Place the bread slices on an oven tray. Add a piece of cooked chicken on each slice, then top with mozzarella (or your preferred cheese).
  6. Place the tray in a preheated oven and bake for 10 minutes, or until the cheese melts.
  7. Remove from the oven, assemble the sandwich, and enjoy!
