Italian Baked Chicken Schnitzel (Șnițel de pui la cuptor italian)

Oven-baked, crispy, cheesy, and packed with Mediterranean flavor — a lighter twist on the classic schnitzel!

Ingredients
    For the Schnitzel:
  • 2 large chicken breasts (cut in half, pounded thin)
  • Salt, to taste
  • Sweet paprika
  • Garlic powder
  • Ground black pepper
  • Dried oregano
  • Ground ginger
  • 2 large eggs
  • 150 grams breadcrumbs (more if needed)
  • Olive oil (for greasing)
  • For the Topping:
  • 3 small tomatoes (grated)
  • 1 tablespoon tomato paste
  • Spices (same blend as above or to taste)
  • Olive oil
  • Grated Parmesan cheese
  • Grated Cheddar cheese
Instructions
  1. Prepare the Chicken:
    • Cut each chicken breast in half and pound thin.

    • Mix together salt, paprika, garlic powder, black pepper, oregano, and ginger.

    • Season both sides of the chicken with half of this spice blend, rubbing it in with your hands.

  2. Set Up Breading Station:
    • Beat 2 eggs in a bowl.

    • In a separate plate, mix breadcrumbs with the remaining spices.

    • Dip each chicken piece first in the egg, then in the breadcrumb mixrepeat this step twice for extra crunch.

  3. Bake the Schnitzels:
    • Place baking paper in an oven-safe pan and lightly grease with oil.

    • Lay out the schnitzels and bake in a preheated oven at 200°C for about 10 minutes.

  4. Make the Sauce & Add Cheese:
    • In a bowl, combine grated tomatoes, tomato paste, spices, and olive oil.

    • Spread this sauce over the baked schnitzels.

    • Top generously with Parmesan and Cheddar cheese.

  5. Final Bake:
      Return to the oven until the cheese is melted and bubbly.
