Oven-baked, crispy, cheesy, and packed with Mediterranean flavor — a lighter twist on the classic schnitzel!
Cut each chicken breast in half and pound thin.
Mix together salt, paprika, garlic powder, black pepper, oregano, and ginger.
Season both sides of the chicken with half of this spice blend, rubbing it in with your hands.
Beat 2 eggs in a bowl.
In a separate plate, mix breadcrumbs with the remaining spices.
Dip each chicken piece first in the egg, then in the breadcrumb mix — repeat this step twice for extra crunch.
Place baking paper in an oven-safe pan and lightly grease with oil.
Lay out the schnitzels and bake in a preheated oven at 200°C for about 10 minutes.
In a bowl, combine grated tomatoes, tomato paste, spices, and olive oil.
Spread this sauce over the baked schnitzels.
Top generously with Parmesan and Cheddar cheese.
