Ingredients

powdered ginger

sweet paprika

olive oil

carrots
2
onions
sprigs of thyme

tbsp
of cream
50
ml
liquid cream for cooking
(optional)
Instructions

In a large pot, fry the smoked bacon until golden brown.

Add the diced onion, leek, and red pepper to the pot. Sauté for 2-3 minutes until softened.

Add the diced potatoes to the pot along with the smoked bacon. Pour in the water.

Stir well and bring the soup to a boil. Once boiling, reduce the heat and let it simmer for 30 minutes.

After 30 minutes, add the diced carrot and celery to the soup. Stir in the tomato juice and season with salt and pepper to taste

Let the soup simmer for another 10-15 minutes until all the vegetables are tender.

Once the soup is ready, garnish with plenty of chopped parsley and lovage

Serve hot with a dollop of sour cream on top.
