I invite you to a HOT SOUP with SMOKE and YELLOW BEANS A delight

Ingredients
  • 2 smoked sausages
  • oil for frying
  • 3 small carrots
  • 1 stalk of green celery
  • 1 onion
  • 1 red pepper
  • 0.5 green and yellow pepper
  • 400 grams yellow beans, pods
  • bors (to taste)
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • parsley
  • 2 egg (yolks)
  • 100 milliliters cooking cream
  • 2 liters water
Instructions
  1. Prepare the Smoked Sausages:

    Remove the skin from the smoked sausages and chop them finely.

  2. Fry the Sausages:

    Heat a saucepan with a tablespoon of oil and fry the chopped sausages until they develop some color. Remove them from the pan and set aside.

  3. Prepare the Vegetables:
    • In the same pan, add the chopped onion and sauté until translucent.
    • Add the sliced and grated carrots, diced peppers, and diced celery. Sauté for a few minutes until slightly softened.
  4. Prepare the Beans:

    Trim and slice the yellow beans. Add them to the pan with the other vegetables.

  5. Combine Ingredients and Boil:
    • Return the cooked sausages to the pan with the vegetables.
    • Pour in 2 liters of water and mix well. Bring the mixture to a boil and let it simmer until the vegetables are tender.
  6. Prepare the Sour Cream:
    • In a large bowl, mix the egg yolks with a pinch of salt.
    • Gradually add the liquid sour cream, stirring continuously to incorporate.
  7. Combine Sour Cream with Soup:
    • Ladle about 5 scoops of hot soup into the sour cream mixture and stir well.
    • Gradually pour the sour cream mixture back into the soup, stirring continuously.
  8. Season and Serve:
    • Season the soup with salt and pepper to taste.
    • Sprinkle generously with chopped parsley before serving.
