- Prepare the Smoked Sausages:
Remove the skin from the smoked sausages and chop them finely.
- Fry the Sausages:
Heat a saucepan with a tablespoon of oil and fry the chopped sausages until they develop some color. Remove them from the pan and set aside.
- Prepare the Vegetables:
- In the same pan, add the chopped onion and sauté until translucent.
- Add the sliced and grated carrots, diced peppers, and diced celery. Sauté for a few minutes until slightly softened.
- Prepare the Beans:
Trim and slice the yellow beans. Add them to the pan with the other vegetables.
- Combine Ingredients and Boil:
- Return the cooked sausages to the pan with the vegetables.
- Pour in 2 liters of water and mix well. Bring the mixture to a boil and let it simmer until the vegetables are tender.
- Prepare the Sour Cream:
- In a large bowl, mix the egg yolks with a pinch of salt.
- Gradually add the liquid sour cream, stirring continuously to incorporate.
- Combine Sour Cream with Soup:
- Ladle about 5 scoops of hot soup into the sour cream mixture and stir well.
- Gradually pour the sour cream mixture back into the soup, stirring continuously.
- Season and Serve:
- Season the soup with salt and pepper to taste.
- Sprinkle generously with chopped parsley before serving.
