Ingredients
  • 1 red bell pepper, finely choppedv
  • 1 green bell pepper, finely chopped
  • Chicken (boneless thigh or breast), cut into small cubes
  • 2 eggs, depending on size
  • 2 tablespoons Greek yogurt
  • 2 tablespoons breadcrumbs (optional for texture)
  • Salt and pepper, to taste
  • Other spices (optional, such as paprika, garlic powder, or mixed herbs)
  • 2 tablespoons flour
  • Grated cheese (optional, such as Parmesan or a soft cheese like mozzarella)
  • 3 oil (for frying)
Instructions
  1. Prepare the Vegetables:
      • Finely chop red bell pepper and green bell pepper into small pieces.
      • Add the chopped peppers into a large bowl.
  2. Prepare the Chicken:
      • Cut the chicken into small cubes.
      • Add the chicken cubes to the bowl with the chopped peppers.
      • If preferred, you can use a meat grinder to mince the chicken, but it is traditional to keep it in small pieces instead.
  3. Prepare the Mixture:
      • In the same bowl, add 1 or 2 eggs (depending on their size), 2 tablespoons of Greek yogurt, 2 tablespoons breadcrumbs, and 2 tablespoons flour.
      • Season with salt and pepper, and feel free to add other spices that you like, such as paprika or garlic powder.
      • If desired, you can add grated cheese for extra flavor and texture.
      • Mix everything together until well combined. The mixture should be somewhat runny – this is normal.
  4. Fry the Schnitzels:
      • Heat 2-3 tablespoons of oil in a frying pan over medium heat.
      • Use a spoon to scoop portions of the mixture and drop them into the hot pan.
      • Cook each portion for about 4-5 minutes on the first side until golden brown.
      • Flip the schnitzels and cook for an additional 2-3 minutes on the other side, ensuring they are cooked through and crispy.
  5. Serve:
      • Remove the schnitzels from the pan and place them on a plate lined with paper towels to absorb any excess oil.
