Ingredients
1 red bell pepper, finely choppedv
1 green bell pepper, finely chopped
Chicken (boneless thigh or breast), cut into small cubes
2 eggs, depending on size
2 tablespoons Greek yogurt
2 tablespoons breadcrumbs (optional for texture)
Salt and pepper, to taste
Other spices (optional, such as paprika, garlic powder, or mixed herbs)
2 tablespoons flour
Grated cheese (optional, such as Parmesan or a soft cheese like mozzarella)
3 oil (for frying)
Instructions
Prepare the Vegetables:
Finely chop red bell pepper and green bell pepper into small pieces.
Add the chopped peppers into a large bowl.
Prepare the Chicken:
Cut the chicken into small cubes.
Add the chicken cubes to the bowl with the chopped peppers.
If preferred, you can use a meat grinder to mince the chicken, but it is traditional to keep it in small pieces instead.
Prepare the Mixture:
In the same bowl, add 1 or 2 eggs (depending on their size), 2 tablespoons of Greek yogurt, 2 tablespoons breadcrumbs, and 2 tablespoons flour.

Mix everything together until well combined. The mixture should be somewhat runny – this is normal.
Fry the Schnitzels:
Heat 2-3 tablespoons of oil in a frying pan over medium heat.

Cook each portion for about 4-5 minutes on the first side until golden brown.
Flip the schnitzels and cook for an additional 2-3 minutes on the other side, ensuring they are cooked through and crispy.
