HOT SOUP with SMOKED SAUSAGE and YELLOW BEANS, such a delicious comfort food

In our family, soup is the base, we like it very much. Today I made a soup with yellow beans, peas, and smoked meat. You know how it turned out delicious, but there's no point in talking long, let me show you how I did it.

I used two of these smoked sausages, if you have a different type of smoked sausage, you can use kaizer, costita, whatever, I found this at the store

I took sausages, removed the skin and cut them into small pieces.

I put a spoonful of oil in a pan, added sausages and left them to fry until they got a little color, while I took care of the vegetables

To begin with, I finely chopped an onion, I used yellow, but if you have tomatoes, it's even better.

I used 4 medium-sized carrots, half of which I cut into rounds and half of which I grated, so the soup gets a very nice color

I used a whole red pepper, half yellow and half green, this is what I had in the fridge, you use whatever you have and whatever you like.

When the sausages were ready, I took them and put them in a bowl, put another spoonful of oil, added the vegetables and sauteed them for a few minutes so that they soften a little

Meanwhile, I diced a strip of celery, if you have the root you can use that too.

You can use yellow beans, but it is not important, you can also use green or whatever you like.

I like to clean their heads by hand, that way I can tell if it has thread or not.

After cleaning them, I cut them into thirds and set them aside.

When the vegetables were cooked, I added fish sausages, celery, yellow beans and around 2 liters of water, you can add more or less depending on your preference.

I mixed everything well and let it boil.

In the meantime, I finely chopped a bunch of parsley and took care of the cream.

In a large bowl, I put two egg yolks, a pinch of salt, mixed everything well, poured in around 100ml of cream and incorporated everything.

With the polonic, I took around 5 polonics and put it over the cream, so that the cream reaches the same temperature as the soup.

I mixed everything well, after which I poured little by little back into the pot with the soup, stirring continuously

At the end, I added the borscht and seasoned it with salt and pepper and sprinkled plenty of parsley
