Homemade Chicken Drob (Romanian-Style Chicken Terrine) | Drob de pui de casă (terină de pui în stil românesc)

A lighter, flavorful twist on the traditional drob, made with chicken instead of organ meat.

Ingredients
    Meat:
  • 500 grams chicken thighs
  • 600 grams chicken breast
  • For boiling:
  • Salt (to taste)
  • ½ onion
  • Water (enough to cover the meat)
  • Vegetables & Aromatics:
  • 1 bunch green onions, finely chopped
  • (Optional) Green garlic, chopped
  • 1 tablespoon butter (for frying)
  • 1 handful fresh parsley, chopped
  • 1 handful fresh dill, chopped
  • Binding:
  • 3 large eggs (for the mixture)
  • 2 large eggs (for topping)
  • Seasoning:
  • Salt (to taste)
  • Black pepper (to taste)
Instructions
  1. Boil the Chicken:
      • Wash the chicken thighs thoroughly and place them in a pot with clean water, salt, and ½ onion.
      • Boil for 15–20 minutes until cooked, then set aside to cool.
      • In a separate pot, boil the chicken breast for about 25 minutes. Let it cool afterward.
  2. Prepare the Green Onion Mixture:
      • Finely chop the green onion (and green garlic if using).
      • Sauté in butter with a pinch of salt until softened.
      • Set aside to cool.
  3. Chop the Meat:
      • Once cooled, cut both the thighs and chicken breast into cubes (uniform size not necessary).
  4. Combine the Ingredients:
      • In a large bowl, combine:
        • Chopped chicken meat
        • Cooked and cooled green onion mixture
        • Chopped parsley and dill
        • Salt and pepper to taste
        • 3 beaten eggs
  5. Assemble the Drob:
      • Transfer the mixture into a baking dish.
      • Beat the remaining 2 eggs and pour them over the top to create a golden crust.
  6. Bake:
      • Preheat the oven to 180°C (356°F).
      • Bake for 45 minutes, or until the top is golden and set.
