For the Salad:
- 4-5 medium carrots (preferably fresh from the garden)
- Black sesame seeds (for garnish)
- White sesame seeds (for garnish)
- 1 clove of garlic (finely chopped)
For the Dressing:
- 2-3 tablespoons of apple cider vinegar (or any vinegar of your choice)
- 2 tablespoons of olive oil (or sunflower oil)
- Salt (to taste)
- Black pepper (to taste)
- 1 tablespoon of honey
- A pinch of piri-piri or chili flakes (optional, for a spicy kick)
- Prepare the Carrots:
- If using garden carrots, there's no need to peel them, but for a more vibrant color, you may choose to peel them.
- Cut the carrots into thin strips using a julienne slicer or the large side of a grater (the salad will taste just as good either way).
