Ingredients
    For the Salad:
  • 4-5 medium carrots (preferably fresh from the garden)
  • Black sesame seeds (for garnish)
  • White sesame seeds (for garnish)
  • 1 clove of garlic (finely chopped)
  • For the Dressing:
  • 2-3 tablespoons of apple cider vinegar (or any vinegar of your choice)
  • 2 tablespoons of olive oil (or sunflower oil)
  • Salt (to taste)
  • Black pepper (to taste)
  • 1 tablespoon of honey
  • A pinch of piri-piri or chili flakes (optional, for a spicy kick)
Instructions
  1. Prepare the Carrots:
    • If using garden carrots, there's no need to peel them, but for a more vibrant color, you may choose to peel them.
    • Cut the carrots into thin strips using a julienne slicer or the large side of a grater (the salad will taste just as good either way).
  2. Prepare the Dressing:
    • In a bowl, mix 2-3 tablespoons of apple cider vinegar with 2 tablespoons of olive oil.
    • Season the mixture with salt and black pepper to taste.
    • Add 1 tablespoon of honey for a touch of sweetness.
    • For extra heat, sprinkle in a pinch of piri-piri or chili flakes (optional).
  3. Assemble the Salad:
    • Pour the prepared dressing over the thinly sliced carrots and mix everything well to coat the carrots evenly.
  4. Garnish:
    • Sprinkle black and white sesame seeds over the salad for an added crunch and flavor.
    • Add the finely chopped garlic to the salad and mix again.
  5. Serve and Enjoy:
    • Once everything is well mixed, your healthy, delicious carrot salad is ready to serve!
