For the Salad:
- 1 bunch green onion (or any type of onion, chopped into small pieces)
- 1/2 head of green lettuce (thinly sliced)
- 3 medium-sized tomatoes (cut into cubes, adjust the quantity as desired)
For the Dressing:
- 1 ripe avocado (peeled and pitted)
- 1 tablespoon mayonnaise
- 2 tablespoons Greek yogurt
- Salt (to taste)
- Black pepper (to taste)
- 1 tablespoon olive oil
- A little water (to adjust consistency)
- 1 tablespoon vinegar
- Fresh parsley and dill (for garnish)
- Prepare the Salad
- Chop the green onion into small pieces and place it in a large bowl.
- Thinly slice the green lettuce and add it to the bowl.
- Dice the tomatoes and add them to the salad.
- Make the Dressing
- Peel and pit the avocado, then mash the flesh with a fork until smooth.
- Add 1 tablespoon of mayonnaise and 2 tablespoons of Greek yogurt to the mashed avocado.
- Season with salt and pepper to taste.
- Add 1 tablespoon of olive oil, a little water to reach your desired consistency, and 1 tablespoon of vinegar.
- Garnish with freshly chopped parsley and dill, and mix everything well.
- Combine the Salad
- Pour the prepared dressing over the salad mixture and toss everything gently to combine.
