- 1 piece of chicken breast (cut into cubes)
- 3 tomatoes (cut into large pieces)
- 1 handful of spinach (optional, or substitute with green/red peppers)
- Salt (to taste)
- Sweet paprika (to taste)
- A pinch of ginger
- 1 clove of cheddar cheese (or your favorite cheese)
- 4 medium-sized eggs
- 1 tablespoon Greek yogurt (or any yogurt of your choice)
- Black pepper (to taste)

- Prepare the Chicken
- Heat a pan and fry the chicken breast cubes until they start to brown.
- Season the chicken with salt, sweet paprika, and a pinch of ginger. Continue frying for another minute to let the spices blend in.
- Prepare the Baking Pan
- Line a resistant oven pan with baking paper.
- Add the cut tomatoes to the pan, followed by spinach (or your choice of vegetables).
- Add the fried chicken cubes on top of the vegetables.
- Grate or break the cheddar cheese over the top.
- Prepare the Egg Mixture
- In a separate bowl, beat the 4 eggs and add 1 tablespoon of Greek yogurt.
- Season the mixture with salt and black pepper.
- Mix well and pour it over the chicken and vegetable mixture in the pan.
- Bake
- Preheat the oven to 200°C (400°F).
- Place the pan in the oven and bake for about 20 minutes or until the top is golden brown.
- Serve
- Once baked, remove from the oven and let it cool slightly.
- Serve and enjoy your healthy and delicious breakfast!
