Healthy and Tasty Chicken Breakfast Bake | Pui la cuptor, sănătos și gustos pentru micul dejun

Ingredients
  • 1 piece of chicken breast (cut into cubes)
  • 3 tomatoes (cut into large pieces)
  • 1 handful of spinach (optional, or substitute with green/red peppers)
  • Salt (to taste)
  • Sweet paprika (to taste)
  • A pinch of ginger
  • 1 clove of cheddar cheese (or your favorite cheese)
  • 4 medium-sized eggs
  • 1 tablespoon Greek yogurt (or any yogurt of your choice)
  • Black pepper (to taste)
  • Baking paper
Instructions
  1. Prepare the Chicken
    1. Heat a pan and fry the chicken breast cubes until they start to brown.
    2. Season the chicken with salt, sweet paprika, and a pinch of ginger. Continue frying for another minute to let the spices blend in.
  2. Prepare the Baking Pan
    1. Line a resistant oven pan with baking paper.
    2. Add the cut tomatoes to the pan, followed by spinach (or your choice of vegetables).
    3. Add the fried chicken cubes on top of the vegetables.
    4. Grate or break the cheddar cheese over the top.
  3. Prepare the Egg Mixture
    1. In a separate bowl, beat the 4 eggs and add 1 tablespoon of Greek yogurt.
    2. Season the mixture with salt and black pepper.
    3. Mix well and pour it over the chicken and vegetable mixture in the pan.
  4. Bake
    1. Preheat the oven to 200°C (400°F).
    2. Place the pan in the oven and bake for about 20 minutes or until the top is golden brown.
  5. Serve
    1. Once baked, remove from the oven and let it cool slightly.
    2. Serve and enjoy your healthy and delicious breakfast!
