For the Dough:
- 250 ml warm milk

For the Filling:

- 500 g sweet goat cheese
- 100 g sugar
- 1 tsp rum essence (optional)
- 1 tsp vanilla essence

- 150 g raisins
- 2 tbsp semolina (if cheese is too watery)

- 1 tbsp milk (for egg wash)

Prepare the Dough
- In a bowl, mix 250 ml warm milk with 15 grams yeast, 80 grams sugar, and 200 grams of flour. Let it rise for 15 minutes.
- Once the mixture has risen, break 2 eggs into the bowl. Add lemon peel, vanilla essence, and the remaining flour (430 grams).
- Add a pinch of salt and mix the ingredients until it starts to come together.
- Turn the dough onto the worktop and knead for about 10 minutes, gradually incorporating 80 grams of softened butter.
- Let the dough rise for about 1 hour or until it doubles in size.

Prepare the Filling
- In a bowl, whisk 2 eggs and a pinch of salt.
- Add 500 grams of sweet goat cheese, 100 grams of sugar, rum essence (optional), vanilla essence, lemon peel, and 150 grams of raisins.
- If the cheese is too watery, add 2 tablespoons of semolina to thicken it.

Assemble the Pies
- After the dough has risen, divide it into 12 equal pieces.
- Take each piece and roll it out. Place a generous amount of the cheese filling in the center of each dough piece.
- Fold the dough over the filling and seal it into a small pie or dumpling shape.

Baking
- Prepare a baking sheet by lining it with parchment paper.
- Place the pies on the baking sheet and brush them with a mixture of 1 egg yolk and 1 tablespoon milk (egg wash).
- Preheat the oven to 180°C (350°F) and bake the pies for about 25 minutes, or until golden brown.
