Fluffy & Juicy Chicken Schnitzels – My Secret Family Recipe
This is the perfect recipe for schnitzels that are crispy and fluffy on the outside, yet incredibly tender and juicy inside. Ideal for sandwiches, a full meal with mashed potatoes, or paired with your favorite sides.
Ingredients
2 chicken breasts, sliced into thin fillets
5 eggs
4 heaping tablespoons of flour (add gradually)
2tbsp plain yogurt (the secret ingredient!)
Salt, to taste
Black pepper, to taste
Chicken seasoning, to taste
Oil, for frying
Plastic wrap, for pounding chicken
Instructions

Prepare the Batter:
Crack the 5 eggs into a large bowl.
Add salt, pepper, and chicken seasoning to taste.
Mix well.
Add 2 heaping tablespoons of flour, stir to combine.
Add another 2 heaping tablespoons of flour and mix again.
The batter should be slightly thicker than pancake batter.
Add 2 tablespoons of yogurt — this is the key to making the meat extra tender and juicy.

Prepare the Chicken:
Cut the chicken breasts into thin strips or schnitzel-style pieces.
Place them between plastic wrap and gently pound with a meat mallet to even out their thickness.

Marinate in Batter:
Place the flattened chicken pieces into the egg-flour-yogurt batter.
Mix to coat them thoroughly.

Cook the Schnitzels:
Heat a generous amount of oil in a frying pan.
Fry the schnitzels until golden on one side, then flip and cook the other side until fully done and golden brown.
Optionally, bake them in the oven at 200°C (392°F) for a healthier version.
