A nostalgic, soft and airy fruit cake just like grandma used to make — no baking powder needed, only whipped eggs and love!
Ingredients
5 eggs
180g sugar (adjust to taste)
Zest of 1 organic (untreated) lemon
1tsp vanilla extract (optional)
30ml oil
180g all-purpose flour (sifted)
1tbsp butter (for greasing the pan)
Fresh fruit of choice (e.g. strawberries, apples, cherries, sour cherries, apricots)

Prepare the Batter
Crack the 5 eggs into a large mixing bowl.
Add 180 g of sugar and beat at high speed for 5–7 minutes, until the mixture triples in volume. This step is crucial since no baking powder is used.
Add the lemon zest and vanilla extract (if using).
Gently fold in 30 ml of oil using a spatula.
Gradually add the sifted flour in two batches, folding gently from bottom to top after each addition. Avoid overmixing to keep the batter airy.

Prepare the Pan
Grease a baking pan with 1 tbsp of butter (or oil and flour as an alternative).
Pour in the batter and smooth it evenly with a spatula.

Add Fruit
Wash, clean, and slice your chosen fruits.
Evenly distribute the fruit slices on top of the batter.

Bake
Bake in a preheated oven at 180°C (356°F) for about 30–40 minutes, or until it passes the toothpick test (a toothpick inserted in the center comes out clean).
