Ingredients
  • 500 grams of cherries, cleaned and washed
  • 1 tablespoon of sugar (for cherries)
  • 5 eggs
  • 1 cup of sugar
  • 0.5 teaspoons teaspoon of salt
  • 2 tablespoons of vanilla essence
  • 1 cup of Greek yogurt (or any yogurt you like)
  • 1 cup of sunflower oil
  • Zest of one lemon
  • 2 cups of flour
  • 1 teaspoon of baking powder
  • 1 tablespoon of cocoa
  • Butter (for greasing of the pan)
  • 1 tablespoon of sugar (in the pan)
  • squeze Half of lemon
Instructions
  1. Preparing the Cherries:
    • Clean and wash 500 grams of cherries.
    • Remove the seeds
    • Add 1 tablespoon of sugar to the cherries and set aside.
  2. Making the Batter:
    • In a large bowl, break 5 eggs.
    • Measure 1 cup of sugar and add it to the eggs.
    • Add 1/2 teaspoon of salt and 2 teaspoons of vanilla essence.
    • Mix until the sugar dissolves.
    • Add 1 cup of Greek yogurt and mix well.
    • Add 1 cup of sunflower oil and incorporate with a whisk.
    • Grate the zest of one lemon and add it to the mixture.
    • Add 2 cups of flour and 1 teaspoon of baking powder, mixing gently to avoid lumps
  3. Preparing the Pan:
    • Grease a pan with butter and sprinkle 1 tablespoon of sugar.
    • Squeeze the juice of half a lemon over the cherries and place them at the bottom of the pan.
  4. Assembling the Cake:
    • Pour three-quarters of the batter over the cherries.
    • Add 1 tablespoon of cocoa to the remaining batter and mix well.
    • Pour the cocoa batter over the batter in the pan.
  5. Baking:
    • Preheat the oven to 160 degrees Celsius.
    • Bake the cake until it passes the toothpick test.
