Fluffy Cheese-Filled Buns with Feta, Mozzarella & Green Onion
Ingredients
For the Dough:
100
milliliters milk
100
milliliters hot water
5
grams dry yeast
1
tablespoon sugar
350
grams bread flour
1
teaspoon salt (or to taste)

milliliters sunflower oil
For the Filling:
150
grams mozzarella cheese, grated
100
grams feta cheese, crumbled or chopped
1
sprig green onion, finely chopped (optional)
For the Egg Wash:
1
egg yolk
2
tablespoons milk
Optional Toppings:
Sesame seeds
Poppy seeds
Coarse salt
Instructions
Activate the yeast:
In a large bowl, mix
100 ml milk
,
100 ml hot water
,
5 g dry yeast
, and
1 tablespoon sugar
.
Stir well until the sugar dissolves completely.
Make the dough:
Add
350 g bread flour
and
salt
to the bowl.
Mix until a dough starts to form.
Gradually add
40 ml sunflower oil
while kneading.
Knead until the dough is
soft and non-sticky
.
Cover the bowl and let the dough
rise for about 1 hour
, or until it
triples in volume
.
Prepare the filling:
In a separate bowl, mix:
150 g grated mozzarella
100 g chopped feta
1 finely chopped green onion
(optional)
Set aside.
Shape the dough:
Once the dough has risen,
punch out the air
and form it into a ball.
Divide the dough into
8 equal pieces
.
Shape each piece into a small ball.
Assemble the buns:
Lightly butter each dough ball.
Flatten each one with your hands.
Place a spoonful of the filling in the center.
Fold, seal, and
roll into dumpling or bun shapes
.
Place the buns on a
baking tray lined with parchment paper
.
Cover and let them rest for
30 minutes
.
Egg wash & toppings:
Mix
1 egg yolk
with
2 tablespoons milk
.
Brush each bun with the egg wash.
Optionally, sprinkle with
sesame seeds, poppy seeds
, or
coarse salt
.
Bake:
Bake in a
preheated oven at 170°C (340°F)
until the buns are
golden and shiny on top
.
