For the Roulade Crust:
5 medium-sized eggs
A pinch of salt
150 grams sugar
30 grams melted butter
150 grams all-purpose flour
Instructions
Prepare the Apple Filling
Wash, peel, and grate the 4 apples.
In a bowl, mix the grated apples with 1 tablespoon of sugar and 1 teaspoon of cinnamon (optional). Stir well and set aside.
Make the Roulade Crust
Preheat the oven to 160°C (320°F). Line a baking tray with parchment paper.
In a large bowl, crack 5 eggs and add a pinch of salt.
Add 150 g of sugar and mix the ingredients together for a few minutes, until the mixture doubles in volume and changes color.
Slowly pour in 30 g of melted butter and mix for another minute.
Gradually incorporate 150 g of flour, adding it in two rounds, mixing gently with wide motions. Avoid overmixing to ensure the dough stays light and fluffy.
Assemble the Roulade
Spread the grated apples evenly on the bottom of the lined baking tray.
Pour the prepared batter over the apples, spreading it evenly across the surface.
Bake
Place the tray in the preheated oven and bake at 160°C (320°F) for about 20-25 minutes or until a toothpick inserted into the center comes out clean.
