Ingredients
    For the Dough:
  • 2 ½ cups of flour
  • 1 teaspoon of salt
  • 2 tablespoons of olive oil
  • 1 cup of warm water
  • For the Filling:
  • 4 potatoes (boiled until soft)
  • 1 large onion (chopped)
  • 2-3 cloves of garlic (chopped)
  • 2 leaves of rosemary
  • 1 tablespoon of olive oil (for sautéing)
  • Salt (to taste)
  • Black pepper (to taste)
Instructions
  1. Prepare the Dough
    1. In a large bowl, combine 2 ½ cups of flour, 1 teaspoon of salt, 2 tablespoons of olive oil, and 1 cup of warm water.
    2. If the dough is too soft, add a little more flour until it reaches a smooth, non-sticky consistency.
    3. Knead the dough for about 10 minutes, then cover and let it rest while you prepare the filling.
  2. Prepare the Filling
    1. In a well-heated pan, add 1 tablespoon of olive oil and sauté 1 chopped onion, 2-3 cloves of garlic, and 2 rosemary leaves until they begin to turn golden.
    2. Once the onions and garlic are cooked, set aside a little of the oil for later use.
    3. Peel the 4 boiled potatoes and mash them well.
    4. Mix the mashed potatoes with the sautéed onion, garlic, and oil. Season with salt and pepper to taste, and mix everything thoroughly.
  3. Form the Rolls
    1. Divide the dough into 4 equal pieces.
    2. Roll each piece into a rectangular shape.
    3. Using a mold (or knife), cut circles from the dough.
    4. Place a teaspoon of the potato filling in the center of each dough circle.
    5. Roll the dough around the filling and seal the edges tightly.
  4. Boil the Rolls
    1. Bring a pot of salted water to a boil.
    2. Carefully drop the rolls into the boiling water.
    3. Boil until the rolls rise to the surface, indicating they are cooked through.
  5. Serve
    1. Remove the potato-filled coltsunas from the water and serve hot.
