A clever and tasty way to use up those leftover Easter eggs — creamy, flavorful, and ready in minutes!

Ingredients
  • 2 hard-boiled eggs (peeled)
  • 3 green onions, finely chopped
  • ½ bell pepper (any color), finely chopped (optional)
  • 1 teaspoon spicy mayonnaise
  • 2 tablespoons Greek yogurt
  • A few sprigs of fresh dill, chopped
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste
  • Feta cheese, crumbled (for topping)
  • Bread slices (2–4 depending on size)
Instructions
  1. Prepare the Eggs
      • Cut the eggs in half and separate the yolks from the whites.
      • Finely chop the egg whites and place in a mixing bowl.
      • Mash or crumble the egg yolks separately.
  2. Combine the Base Mixture
      • To the chopped egg whites, add:
        • Chopped green onion
        • Finely chopped bell pepper (optional)
        • Chopped dill
  3. Make the Creamy Dressing
      • Mix the egg yolks with:
        • 1 tsp spicy mayo
        • 2 tbsp Greek yogurt
      • Pour this over the egg white mixture.
  4. Season
      • Add salt, black pepper, and garlic powder to taste.
      • Mix everything thoroughly until well combined.
  5. Assemble the Sandwiches
      • Spoon the mixture generously onto bread slices.
      • Sprinkle feta cheese on top.
  6. Bake
      • Place the assembled bread on a baking tray.
      • Bake in a preheated oven at 200°C (390°F) for 10 minutes, or until golden and heated through.
  7. Serve
      • Serve hot with your favorite dipping sauce or a side salad.
