- In a large pot, add the chicken back, wings, and pieces of skin. Pour in 2-3 litres of water and season with salt. Bring the pot to a boil
- Skim the soup well and add the vegetables. Let everything simmer for about an hour.
- In a bowl, beat the eggs and season with salt and pepper. Gradually add the semolina until you achieve a consistency where the utensil used leaves traces that remain formed for a few seconds.
- Remove the vegetables and meat from the soup and strain the soup back into the pot.
- With a moistened spoon, shape the dumplings and place them in the hot soup. Cover the pot and let the dumplings simmer over medium-low heat for 20-25 minutes.
- Remove the meat from the bones and turn the dumplings over to the other side. Add the carrots and meat back into the soup, pour in another cup of water, and let it simmer for another 10 minutes.
