- Drizzle two tablespoons of olive oil into an ovenproof dish and spread it evenly.
- Slice the onion into rounds and place them in the dish.
- Slice the potatoes thinly and layer them in the dish.
- Cut the chicken breast into cubes and add them to the dish.
- Season everything with salt, garlic powder, sweet paprika, oregano, black pepper, and mix well.
- Grate the tomatoes and spread them over the dish, or use tomato paste/sauce if preferred.
- Add a glass of water to the dish.
- Cover the dish with damp parchment paper.
- Bake in the preheated oven for about 30-40 minutes or until the potatoes are tender.
- emove the parchment paper, sprinkle mozzarella cheese over the top, and bake for an additional 10 minutes or until the cheese is melted and golden brown.
