- Season the Chicken:
- Season the chicken thighs with salt, black pepper, and sweet paprika. Drizzle with olive oil and mix well. Set aside.
- Cook the Chicken:
- In a well-heated pan, add a cube of butter and two tablespoons of oil.
- Once heated, add the seasoned chicken thighs to the pan and fry until they start to brown.
- Flip the chicken thighs over and add a glass of water to the pan. Cover with a lid and let it simmer until cooked through
- Prepare the Vegetables:
- Meanwhile, chop the onion finely and cut the carrots into larger pieces.
- When the chicken is cooked, remove it from the pan and set it aside.
- In the same pan with the remaining oil, add the chopped onion and carrots. Add another glass of water and let it boil for 2 minutes
- Cook the Potatoes:
- Once the onion and carrots have softened slightly, add the cubed potatoes to the pan.
- Season with salt, black pepper, and parsley.
- Cover the pan with a lid and let the potatoes simmer until they are tender.
- Serve:
- Once the potatoes are cooked, return the chicken thighs to the pan.
- Serve the chicken with mashed potatoes and vegetables directly from the pan.
- Garnish with additional parsley if desired
