Ingredients
    For the Salad:
  • 1 medium-sized onion (finely chopped)
  • 1 cucumber (cut into cubes)
  • 1/2 can of sweet corn (optional)
  • 1 can of tuna (drained)
  • 4 capia peppers (or any vegetables you like)
  • 2 medium-sized potatoes (peeled and washed)
  • Fresh parsley (for garnish)
  • For the Dressing:
  • 1 tablespoon of mayonnaise (optional, or substitute with yogurt)
  • Salt (to taste)
  • Black pepper (to taste)
  • Juice of half a lemon (or apple cider vinegar as a substitute)
  • Balsamic vinegar sauce (for garnish)
Instructions
  1. Prepare the Vegetables:
    • Finely chop the onion and place it in a large mixing bowl.
    • Cut the cucumber into cubes and add it to the bowl with the onion.
    • If you’re using sweet corn, add 1/2 can of it to the vegetables.
    • Drain the tuna from the can and add it to the bowl with the vegetables.
  2. Prepare the Dressing:
    • In a separate small bowl, mix 1 tablespoon of mayonnaise (or yogurt if preferred) with a pinch of salt, a little black pepper, and the juice of half a lemon.
    • If you prefer a tangier taste, you can substitute the lemon juice with apple cider vinegar.
  3. Assemble the Salad:
    • Pour the dressing over the vegetables and tuna mixture. Stir everything well to combine and coat the ingredients evenly with the dressing.
  4. Prepare the Capia Peppers:
    • Wash and peel the 4 capia peppers (or any vegetable you prefer to use). Cut them into slices or pieces.
    • Arrange them on a plate to replace the bread or serve alongside the salad.
  5. Garnish and Serve:
    • Garnish the salad with freshly chopped parsley and drizzle a little balsamic vinegar sauce on top for added flavor.
    • Serve the salad with the capia peppers or any other vegetables you prefer.
