For the Dressing:
1 tablespoon of mayonnaise (optional, or substitute with yogurt)
Salt (to taste)
Black pepper (to taste)
Juice of half a lemon (or apple cider vinegar as a substitute)
Balsamic vinegar sauce (for garnish)
Instructions
Prepare the Vegetables:
Finely chop the onion and place it in a large mixing bowl.
Cut the cucumber into cubes and add it to the bowl with the onion.
If you’re using sweet corn, add 1/2 can of it to the vegetables.
Drain the tuna from the can and add it to the bowl with the vegetables.
Prepare the Dressing:
In a separate small bowl, mix 1 tablespoon of mayonnaise (or yogurt if preferred) with a pinch of salt, a little black pepper, and the juice of half a lemon.
If you prefer a tangier taste, you can substitute the lemon juice with apple cider vinegar.
Assemble the Salad:
Pour the dressing over the vegetables and tuna mixture. Stir everything well to combine and coat the ingredients evenly with the dressing.
Prepare the Capia Peppers:
Wash and peel the 4 capia peppers (or any vegetable you prefer to use). Cut them into slices or pieces.
Arrange them on a plate to replace the bread or serve alongside the salad.
Garnish and Serve:
Garnish the salad with freshly chopped parsley and drizzle a little balsamic vinegar sauce on top for added flavor.
Serve the salad with the capia peppers or any other vegetables you prefer.
