For the Omelette:
- 2 medium-sized potatoes, cubed
- 2-3 tablespoons oil
- 0.5 cups water
- A few sprigs of green onion, finely chopped (separated into white and green parts)
- 1 capia pepper, finely chopped (or any pepper you prefer)
- 3 eggs (adjust quantity based on serving size)
- Salt, to taste
- Black pepper, to taste
- A few slices of ham
- Cheddar cheese, for sprinkling

- Sauce, as preferred
- Prepare the Potatoes:
- In a well-heated pan, add 2-3 tablespoons of oil.
- Add the cubed potatoes and ½ cup of water.
- Simmer the potatoes until they start to soften
- Add the Vegetables:
- Finely chop the white part of the green onions.
- Add the chopped white onions to the pan with the potatoes.
- Add the finely chopped capia pepper (or any preferred pepper).
- Season with salt and continue to simmer until the potatoes are tender.
- Prepare the Egg Mixture:
- In a large bowl, break 3 eggs (adjust the number based on how many servings you want).
- Season with salt and a little black pepper.
- Add the chopped green part of the green onions.
- Combine and Bake:
- Preheat the oven to 200°C (392°F).
- Mix the cooked potatoes and vegetables with the egg mixture.
- Prepare a baking tray with moistened baking paper to help it settle better in the pan.
- Pour half of the egg and potato mixture into the baking tray and level it evenly.
- Layer a few slices of ham on top of the first layer.
- Pour the remaining egg and potato mixture over the ham.
- Bake:
- Place the baking tray in the preheated oven and bake for about 25 minutes.
- After baking, sprinkle a little cheddar cheese on top.
- Let the cheese melt and serve the omelette warm.
