Delicious Homemade Shepherd’s Pie

Ingredients
  • 600 grams potatoes, cubed
  • Water (enough to cover the potatoes)
  • Salt (to taste)
  • Black pepper (to taste)
  • 1 tablespoon butter
  • 50 milliliters milk
  • 1 tablespoon chopped fresh parsley
  • For the filling:
  • 2 tablespoons olive oil
  • 400 grams minced pork (or beef)
  • 1 red onion, finely chopped (or yellow onion)
  • 2 small carrots, cubed
  • ½ red bell pepper, chopped
  • Celery (optional, or any vegetables of choice)
  • 3 cloves garlic, finely chopped
  • 50 milliliters tomato juice
  • Salt and black pepper (to taste)
  • For assembly:
  • Fresh parsley, chopped
  • Cheddar cheese, grated
Instructions
  1. Prepare the mashed potatoes:
      • Place the cubed potatoes in a large pot and cover them with water.
      • Add salt and boil until soft.
      • Once cooked, drain the water and mash the potatoes.
      • Add butter, milk, chopped parsley, salt, and black pepper. Mix well and set aside.
  2. Prepare the filling:
      • Heat 2 tablespoons of olive oil in a pan over medium heat.
      • Add the minced pork and cook until it changes color.
      • Add the chopped onion, carrots, bell pepper, celery (if using), and garlic.
      • Cook until the vegetables soften.
      • Pour in the tomato juice and let the mixture simmer for 10 minutes.
      • Season with salt and black pepper to taste.
  3. Assemble the shepherd’s pie:
      • Preheat the oven to 200°C (392°F).
      • Transfer the cooked meat and vegetable mixture into an oven-safe dish.
      • Sprinkle some chopped parsley and a layer of grated cheddar cheese.
      • Spread the mashed potatoes evenly on top.
      • Add another layer of cheddar cheese.
  4. Bake:
      • Place the dish in the preheated oven and bake for 30 minutes, until the top is golden and bubbly.
  5. Serve & enjoy!
      • Let the shepherd’s pie cool slightly before serving.
