Delicious Homemade Shepherd’s Pie
Ingredients

grams potatoes, cubed
Water (enough to cover the potatoes)
Salt (to taste)
Black pepper (to taste)

For the filling:

tablespoons olive oil

grams minced pork (or beef)

red onion, finely chopped (or yellow onion)

small carrots, cubed

red bell pepper, chopped
Celery (optional, or any vegetables of choice)

cloves garlic, finely chopped

milliliters tomato juice
Salt and black pepper (to taste)
For assembly:
Fresh parsley, chopped
Cheddar cheese, grated
Instructions
Prepare the mashed potatoes:
Place the cubed potatoes in a large pot and cover them with water.
Add salt and boil until soft.
Once cooked, drain the water and mash the potatoes.
Add butter, milk, chopped parsley, salt, and black pepper. Mix well and set aside.
Prepare the filling:
Heat 2 tablespoons of olive oil in a pan over medium heat.
Add the minced pork and cook until it changes color.
Add the chopped onion, carrots, bell pepper, celery (if using), and garlic.
Cook until the vegetables soften.
Pour in the tomato juice and let the mixture simmer for 10 minutes.
Season with salt and black pepper to taste.
Assemble the shepherd’s pie:
Preheat the oven to 200°C (392°F).
Transfer the cooked meat and vegetable mixture into an oven-safe dish.
Sprinkle some chopped parsley and a layer of grated cheddar cheese.
Spread the mashed potatoes evenly on top.
Add another layer of cheddar cheese.
Bake:
Place the dish in the preheated oven and bake for 30 minutes, until the top is golden and bubbly.
