Delicious Cabbage and Walnut Olives (Coliba) | Măsline delicioase cu varză și nuci (Coliva)
Ingredients
500 grams cabbage (washed thoroughly)
2 liters water
1 teaspoon salt
200 grams sugar
400 grams walnuts
150 grams biscuits
Peel of 2 lemons (grated)
1 teaspoon vanilla essence
1 teaspoon rum essence
Powdered sugar (for coating)
Cocoa powder (for decoration)
Instructions
Prepare the Cabbage
In a deep pot, add 500 g of washed cabbage and 2 liters of water.
Add 1 teaspoon of salt and bring to a boil over low heat.
Once the cabbage is boiled, add 200 g of sugar and let it boil for another 10 minutes.
Remove from heat and let it cool overnight.
Roast and Chop the Walnuts
Preheat the oven to 200°C (392°F).
Place 400 g of walnuts on a baking tray and roast them in the oven for about 5 minutes.
Once roasted, chop half of the walnuts by hand and process the remaining walnuts in a food processor until finely ground.
Prepare the Biscuits
Chop 150 g of biscuits as finely as possible. You can do this using a knife or a food processor.
Combine the Ingredients
In a large mixing bowl, combine the boiled cabbage mixture (after it’s cooled overnight), 150 g of chopped biscuits, the finely ground walnuts, the coarsely chopped walnuts, grated lemon peel, vanilla essence, and rum essence.
Mix everything together until well combined.
Shape the Olives
Shape the mixture into small oval or ball-like shapes, resembling olives.
Roll each shaped olive in powdered sugar to coat them.
Dust each olive with cocoa powder to create a decorative "cross" pattern on top.
Serve
Let the olives set before serving.
