Roast and Chop the Walnuts
- Preheat the oven to 200°C (392°F).
- Place 400 g of walnuts on a baking tray and roast them in the oven for about 5 minutes.
- Once roasted, chop half of the walnuts by hand and process the remaining walnuts in a food processor until finely ground.
3 Prepare the Biscuits
- Chop 150 g of biscuits as finely as possible. You can do this using a knife or a food processor.
4 Combine the Ingredients
- In a large mixing bowl, combine the boiled cabbage mixture (after it’s cooled overnight), 150 g of chopped biscuits, the finely ground walnuts, the coarsely chopped walnuts, grated lemon peel, vanilla essence, and rum essence.
- Mix everything together until well combined.
5 Shape the Olives
- Shape the mixture into small oval or ball-like shapes, resembling olives.
- Roll each shaped olive in powdered sugar to coat them.
- Dust each olive with cocoa powder to create a decorative "cross" pattern on top.
6 Serve
- Let the olives set before serving.
