For the Dough:
- 1 cup warm water
- ½ cups oil
- 25 grams fresh yeast
- 1 tablespoon sugar
- ½ teaspoons salt
- 2 cups flour
For the Filling:
- 2 kilograms peeled apples (grated)
- 5 tablespoons sugar (adjust to taste)
- Juice of ½ lemon
- 3 tablespoons semolina
- 1 tablespoon cinnamon
- 100 grams chopped walnuts
- Prepare the Dough:

- In a bowl, combine 1 cup warm water, ½ cup oil, 25g fresh yeast, 1 tablespoon sugar, and ½ teaspoon salt. Mix well.
- Add 2 cups of flour and knead for about 10 minutes until the dough becomes smooth and non-sticky.
- Leave the dough to rise for 1 hour.
- Prepare the Filling:

- Grate 2 kg of apples (from a fresh garden if possible) and place them in a pan.
- Add 5 tablespoons of sugar and juice of ½ lemon to the apples, then cook for 10 minutes or until the liquid evaporates.
- Transfer the apple mixture to a bowl and stir in 3 tablespoons of semolina and 1 tablespoon of cinnamon. Let it cool.
- Chop 100g of walnuts and set them aside.
- Assemble the Pie:

- Once the dough has risen, divide it into 3 equal pieces.
- Take the first piece and spread it evenly in a greased tray using your fingers.
- Divide the cooled apple filling into 2 equal parts. Spread the first half of the filling over the dough in the tray.
- Sprinkle half of the chopped walnuts over the filling.
- Roll out the second piece of dough into a square shape using a rolling pin and place it over the filling.
- Add the second half of the filling and walnuts on top.
- Place the final piece of dough over the filling and walnuts, and cut the pie into squares.
- Bake:

- Preheat the oven to 180°C (350°F).
- Place the pie in the oven and bake until the top is golden brown.
