Season chicken thighs (or pounded chicken breast) on both sides with salt and pepper. Set aside.
Plate 1: Add 200 g flour.
Plate 2: Add grated cheddar cheese.
Bowl: Beat 3 large eggs, season with a little salt, pepper, and optional spices.
Take each piece of chicken:
Dip it in the beaten eggs.
Coat it in flour and shake off the excess.
Dip it again in the eggs.
Finally, coat it generously in grated cheddar cheese.
Heat oil in a pan over medium-high heat.
Fry each schnitzel for a few minutes on each side until golden brown and crispy.
Adjust heat as needed to avoid burning the cheese.
Remove and drain on paper towels.
Serve hot with your favorite side dish or sauce.
