Crispy and Juicy Meatballs (Chifteluțe)

These meatballs are crispy on the outside and juicy on the inside. They are a delight whether served with mashed potatoes, tomato sauce, or on their own with bread and cheese. Perfect for any occasion!

Ingredients
  • 2 red onions (or yellow onions)
  • 400 grams ground pork
  • 2 medium potatoes (grated and drained of excess liquid)
  • 2 slices of bread (soaked in water or milk)
  • Fresh parsley (chopped)
  • Thyme (to taste)
  • 2 medium eggs
  • Salt and pepper (to taste)
Instructions
  1. Prepare the Ingredients:
      • Finely chop the 2 red onions (or yellow onions) and place them in a bowl.
      • Grate 2 medium potatoes and drain any excess liquid.
      • Soak 2 slices of bread in water (or milk), then tear it into small pieces.
  2. Mix the Meatball Mixture:
      • In a large bowl, add the 400g ground pork, grated potatoes, bread pieces, chopped parsley, thyme, 2 beaten eggs, and salt and pepper to taste.
      • Mix everything thoroughly until well combined. Cover the bowl with plastic wrap and refrigerate for 30 minutes to allow the flavors to meld.
  3. Form the Meatballs:
      • After the mixture has chilled, form the meatballs into small (for sauces) or larger (for serving with bread) balls, depending on your preference.
  4. Cook the Meatballs:
      • Heat oil in a pan and fry the meatballs over medium heat, turning them occasionally to ensure they cook evenly and are golden brown on the outside.
      • Do not overcook them, as they may become dry. When they are done, remove them from the pan and place them on a paper towel to absorb any excess oil.
  5. Serve:
      • Serve the meatballs with a side of mashed potatoes, tomato sauce, bread, cheese, and fresh tomatoes for a delicious meal!
