Creamy Minced Meat Pasta with Parmesan
Ingredients
For the sauce:

olive oil

medium onion, finely chopped

cloves garlic, minced or grated
½
red bell pepper, finely chopped

minced pork (or beef/chicken)

tomato juice

chicken broth (or water)
Salt (to taste)
Black pepper (to taste)
Rosemary (to taste)

For the pasta:

pasta of choice (penne, spaghetti, fusilli, etc.)
Salt (for boiling water)
A little pasta water (reserved from boiling)
Parmesan cheese (for serving)
Instructions

Prepare the base:
Heat a pan over medium heat and add 2 tablespoons of olive oil.
Add the finely chopped onion and garlic. Sauté for about 10 minutes until softened.

Cook the vegetables & meat:
Add the finely chopped red bell pepper and cook for another 5 minutes.
Add the minced pork (or preferred meat) and cook until it changes color.

Make the sauce:
Pour in the tomato juice and chicken broth (or water if broth is unavailable).
Season with salt, black pepper, and rosemary.
Let it simmer for about 15 minutes.

Cook the pasta:
Meanwhile, boil the pasta in salted water according to package instructions.
Reserve a small amount of pasta water before draining.

Combine everything:
Add 1 tablespoon of cream cheese to the sauce and mix well.
Toss in the drained pasta along with a little pasta water to help bind everything together.
Let it cook together for about 10 minutes, stirring occasionally.

Serve & enjoy:
Serve hot, topped with plenty of grated Parmesan.
