Creamy Greek Chicken Soup with Yogurt and Lemon | Supa cremoasă de pui grecească cu iaurt și lămâie

Ingredients
  • 1 whole chicken back and a few wings
  • 3 carrots
  • 1 red pepper
  • Celery
  • onion
  • 1 cup of rice
  • Salt and pepper to taste
  • Lemon juice
  • 150 grams of Greek yogurt
  • 2 egg yolks
  • Fresh parsley
Instructions
  1. In a large pot, add the chicken back and wings, cover with water, and put to a boil.
  2. Smoke the soup well, then add chopped carrots, red pepper, celery, and onion. Let it boil for an hour.
  3. Remove the meat and vegetables from the soup separately.
  4. In the remaining soup, add finely chopped onion, carrots, and washed rice. Boil until the rice is cooked.
  5. Blend the cooked vegetables with some of the soup to create a smooth mixture.
  6. Remove the meat from the bones and shred it.
  7. In a bowl, mix Greek yogurt, egg yolks, chopped parsley, and lemon juice.
  8. Gradually incorporate some hot soup into the yogurt mixture.
  9. Return the shredded chicken to the pot, add the chopped vegetables, and season with salt and pepper.
    Serve hot with a squeeze of lemon juice on top. Enjoy your Greek chicken soup!
