Creamy Chicken Pasta with Parmesan

Ingredients
  • Chicken thighs (or chicken breast, if preferred)
  • Chicken seasoning (store-bought or homemade)
  • Olive oil (for roasting)
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon butter
  • Milk (about 1 cup, adjust to desired sauce consistency)
  • Parmesan cheese, grated (about ½ cup, more if desired)
  • Cooking cream (about 1/2 cup)
  • Cooked pasta (your choice of pasta, e.g., penne or fettuccine)
  • Fresh basil (a few leaves, chopped)
  • Pasta water (a little reserved from boiling pasta)
Instructions
  1. Prepare the Chicken:
      • Preheat the oven to 180°C (350°F).
      • Season the chicken thighs with chicken seasoning and a bit of olive oil.
      • Roast in the oven for about 30 minutes or until the chicken is cooked through and golden brown.
  2. Prepare the Sauce:
      • While the chicken roasts, finely chop the onion and garlic.
      • In a pan, melt 1 tablespoon of butter over medium heat.
      • Add the onion and garlic to the pan and sauté for about 2 minutes, or until softened and fragrant.
  3. Combine Ingredients for the Sauce:
      • Once the chicken is ready, shred it into bite-sized pieces.
      • Add the shredded chicken to the pan with the onions and garlic.
      • Pour in the milk and stir in the parmesan cheese.
      • Add the cooking cream and stir everything together.
      • Let the sauce simmer for about 1 minute to thicken slightly.
  4. Add Pasta:
      • Add the cooked pasta to the sauce, along with a little bit of reserved pasta water to adjust the consistency of the sauce.
      • Add fresh basil and stir everything together.
      • Let it cook for another 5 minutes, allowing the flavors to combine and the pasta to absorb the sauce.
  5. Serve and Enjoy:
      • Serve the creamy chicken pasta warm, garnished with extra parmesan and basil if desired.
