Cottage Cheese and Apple Cake – A Simple and Delicious Treat

A soft, moist, and flavorful cake made with cottage cheese and fresh apples — perfect for any occasion! This easy recipe requires just a few ingredients and minimal effort for maximum delight.

Ingredients
  • 5 whole eggs
  • 200 grams granulated sugar
  • 500 grams cottage cheese (sweet or slightly salty, as preferred)
  • 200 grams melted butter
  • Zest of 1 organic lemon
  • 250 grams all-purpose flour
  • 10 grams baking powder
  • 2 apples, cored and chopped
  • Powdered sugar (for dusting)
Instructions
  1. Prepare the Batter Base
    1. In a large bowl, crack 5 whole eggs.
    2. Add 200 g sugar and beat using a mixer on high speed for about 5 minutes, until the mixture triples in volume and becomes pale.
  2. Add Dairy and Flavor
    1. Add 500 g cottage cheese and 200 g melted butter.
    2. Incorporate well until the mixture is smooth.
    3. Add the zest of one organic lemon for extra flavor.
  3. Mix Dry Ingredients
    1. In a separate bowl, mix 250 g flour with 10 g baking powder.
    2. Sift the dry ingredients and gently fold them into the wet mixture using a spatula.
  4. Assemble the Cake
    1. Pour the batter into a 20 cm diameter baking pan, lined or greased.
    2. Core and chop 2 apples into small pieces (or slice them, as you prefer).
    3. Arrange the apple pieces over the top of the batter however you like.
  5. Bake
    1. Bake the cake in a preheated oven at 180°C (356°F) for 45–50 minutes, or until it passes the toothpick test.
  6. Serve
    1. Once cooled, sprinkle with powdered sugar on top.
    2. Slice and enjoy!
