Classic Homemade Mayonnaise (Just Like Mom Used to Make)

hard-boiled egg yolk

raw egg yolk

heaping tablespoon of mustard
Vegetable oil (as needed – add gradually)
Instructions

Boil the egg:
Place one
egg
in a small pot and cover with water.
Boil until the yolk is fully
hard
.
Transfer to a cup of
cold water
and let it cool completely for easier peeling.

Prep the yolk base:
Peel the boiled egg and remove the yolk.
Place the
hard-boiled yolk
in a mixing bowl and mash it well with a
fork

(Optional: For extra smoothness, press it through a fine sieve.)

Start the emulsion:
Add the
mustard
and the
raw egg yolk
to the mashed yolk.
Stir together until well combined.

Incorporate the oil:
Begin adding
vegetable oil
little by little
