Classic Homemade Mayonnaise (Just Like Mom Used to Make)

Ingredients
  • 1 hard-boiled egg yolk
  • 1 raw egg yolk
  • 1 heaping tablespoon of mustard
  • Vegetable oil (as needed – add gradually)
Instructions
  1. Boil the egg:
      • Place one egg in a small pot and cover with water.
      • Boil until the yolk is fully hard.
      • Transfer to a cup of cold water and let it cool completely for easier peeling.
  2. Prep the yolk base:
      • Peel the boiled egg and remove the yolk.
      • Place the hard-boiled yolk in a mixing bowl and mash it well with a fork.
      • (Optional: For extra smoothness, press it through a fine sieve.)
  3. Start the emulsion:
      • Add the mustard and the raw egg yolk to the mashed yolk.
      • Stir together until well combined.
  4. Incorporate the oil:
      • Begin adding vegetable oil little by little, stirring constantly with a spoon or whisk.
      • Keep mixing until the oil is fully incorporated before adding more.
      • Continue until you reach your desired quantity and consistency.
  5. Optional shortcut:
      • If you're in a hurry, you can use a hand mixer to speed up the emulsifying process.
    This creamy, flavorful mayonnaise is perfect on bread with a pinch of salt, in salads, or as a base for sauces.
