Chicken with Onion and Tomato Sauce

Ingredients
  • Chicken thighs (with skin), 4-6 pieces
  • Chicken wings, 4-6 pieces
  • Salt, to taste
  • Black pepper, to taste
  • Sweet paprika, to taste
  • 1 tablespoon oil (for seasoning)
  • 2 tablespoons oil (for frying)
  • 3 medium-sized onions, finely chopped
  • 3 tablespoons tomato paste (adjustable to taste)
  • 1.5 cup water
  • 1 bay leaf
  • Salt and pepper, to taste
Instructions
  1. Prepare the Chicken:
      • Mark the chicken thighs and wings with a knife.
      • Season the chicken with salt, black pepper, sweet paprika, and 1 tablespoon oil. Mix everything well.
  2. Fry the Chicken:
      • Heat 2 tablespoons oil in a pan over medium heat.
      • Place the chicken pieces with the skin down and let them fry until browned, turning them over for a few more minutes to brown both sides.
      • Once browned, remove the chicken and set aside.
  3. Cook the Onion:
      • In the same pan, add the chopped onions and cook them over low to medium heat for about 2-3 minutes, until they start to crackle.
      • Add 3 tablespoons of tomato paste and mix well.
      • Pour in 1.5 cups of water and stir everything together.
  4. Simmer the Dish:
      • Return the browned chicken to the pan, add a bay leaf, and season with salt and pepper.
      • Cover and simmer over low to medium heat for 30 minutes, stirring occasionally.
  5. Serve:
      • Once the chicken is tender and the sauce is well developed, the dish is ready to serve.
