A quick and tasty oven-baked chicken recipe, ready in about 30 minutes. Juicy chicken parcels filled with cheese and tomatoes, crispy on the outside and perfect for a simple family meal.
Cut the chicken breasts into large pieces.
Place them in a blender and process until minced.
Line a baking tray with baking paper.
Spoon the minced chicken onto the tray, forming about 4 portions.
Flatten each portion with a fork into a square shape.
Season with salt and optional spices.
Set aside.
Place 2 slices of cheese on one side of each chicken square.
Add cherry tomatoes on top.
Optionally, add salami for extra flavor.
Using a wet spatula, fold and seal the chicken to form parcels.
Brush each parcel with beaten egg.
Sprinkle generously with panko breadcrumbs.
Preheat the oven to 200°C (390°F).
Bake the parcels until golden brown and cooked through.
