Chicken Breast with Red Sauce and Mashed Potatoes

Ingredients
    For the chicken:
  • 3 pieces of chicken breast, cut in half
  • Salt, to taste
  • Black pepper, to taste
  • Oregano, to taste
  • Sweet paprika, to taste
  • Garlic powder, to taste
  • Turmeric, a pinch
  • Hot pepper (optional), to taste
  • 1 tablespoon of olive oil (for seasoning)
  • Oil (for frying)
  • 1 small onion, chopped
  • 1 can of tomatoes (in its own juice)
  • Bay leaf
  • Salt and black pepper, to taste
  • ½ cup of water
  • For the mashed potatoes:
  • 4 medium-sized potatoes
  • 1 tablespoon of cream cheese
  • Salt and pepper, to taste
  • Chives, finely chopped (or green onion)
  • A little milk (to desired consistency)
Instructions
  1. Prepare the chicken:
      • Cut the chicken breasts into halves.
      • Season with salt, black pepper, oregano, sweet paprika, garlic powder, turmeric, and olive oil. Mix well to coat evenly.
  2. Cook the chicken:
      • Heat oil in a pan over medium heat.
      • Fry the seasoned chicken breasts until golden brown. Remove from the pan and set aside.
  3. Prepare the sauce:
      • In the same pan, add the chopped onion and sauté until softened.
      • Add the can of tomatoes, salt, black pepper, garlic powder, and a bay leaf.
      • Add ½ cup of water and bring to a simmer. Let the sauce cook for about 10 minutes.
  4. Finish the sauce and chicken:
      • Add the cooked chicken breasts to the sauce and let everything simmer for another 10 minutes.
  5. Prepare the mashed potatoes:
        • Peel and boil the potatoes in salted water until soft.
        • Mash the potatoes with a fork or potato masher.
        • Add cream cheese, salt, pepper, chives (or green onion), and a little milk. Mix everything until smooth and creamy.
  6. Serve:
      • Serve the chicken with red sauce over a bed of creamy mashed potatoes.
