Chicken and Zucchini Meatballs

Ingredients
  • 2 small zucchini (grated)
  • 500 grams chicken legs (cut into cubes, or you can use chicken breast or any meat you prefer)
  • 3 cloves of garlic (grated)
  • Salt (to taste)
  • Black pepper (to taste)
  • A few spices for chicken (optional, to your liking)
  • 2 tablespoons flour
  • 60 grams cheddar cheese (grated)
  • 1 egg
  • Juice from half a lemon
  • A handful of fresh parsley (finely chopped)
  • Oil (for frying)
Instructions
  1. Prepare the Zucchini:
      • Grate the zucchini and sprinkle it with salt. Let it sit for 5 minutes to release moisture.
      • After 5 minutes, drain the excess juice from the zucchini.
  2. Prepare the Meatball Mixture:
      • In a large bowl, combine the drained zucchini, chicken meat (cut into cubes), and the grated garlic.
      • Add black pepper, chicken spices (if desired), 2 tablespoons flour, cheddar cheese, and 1 egg.
      • Add juice from half a lemon and chopped parsley.
      • Mix everything well until the ingredients are evenly combined.
  3. Form the Meatballs:
      • Using a spoon, shape the mixture into meatballs.
  4. Fry the Meatballs:
      • Heat oil in a pan over medium heat.
      • Carefully place the meatballs in the pan and fry them until they are golden brown on both sides.
      • Be patient and don’t turn them over too early to avoid breaking.
      • Once browned, remove the meatballs and place them on a paper napkin to absorb excess oil.
  5. Serve:
      • Serve the meatballs with mashed potatoes, in a sandwich, or as a standalone dish.
