Cook the Mushrooms and Onions
- In the same pan, add the mushrooms and green onions (or dried onion).
- Cook them for about 10-15 minutes, until they soften and release moisture.
- Season with salt and pour in 1/2 cup of cheese with wine (or regular cheese).
- Add 1 tablespoon of cream cheese and your favorite condiments (optional).
- Return the cooked chicken to the pan and cook for another 10 minutes until everything is well combined. Add a little black pepper at the end.
4 Make the Mashed Potatoes
- Once the potatoes are cooked, drain them and season with salt.
- Add 1 tablespoon of butter, 1 tablespoon of cream cheese, a bit of cheese, and a splash of milk.
- Mash the potatoes until smooth and creamy.
5 Assemble the Casserole
- Preheat the oven to 200°C (392°F).
- In an oven-safe dish, spread half of the mashed potatoes on the bottom of the dish, pressing it down to create an even layer.
- Add the chicken and mushroom mixture on top of the mashed potatoes.
- Cover the chicken mixture with the remaining mashed potatoes, spreading it evenly across the surface.
- Grate 60 grams of cheese on top of the mashed potatoes.
6 Bake the Casserole
- Place the dish in the oven and bake for about 20 minutes, or until the cheese melts and the casserole is heated through.
