Cheesy Tortilla Egg Bake – Quick and Delicious with Leftover Wraps

Ingredients
  • Tortillas (flatbreads/lipii) – as needed (about 3–4, depending on the size)
  • 3 eggs
  • A few slices of salami (or ham, baloney, etc.), diced
  • Cheddar cheese, grated (or any cheese you like: mozzarella, gouda, etc.)
  • 1 tablespoon Greek yogurt (or any plain yogurt)
  • Salt – to taste
  • Oregano – for topping
Instructions
  1. Prepare the Filling:
      • Dice the salami (or your preferred deli meat).
      • Grate the cheese.
      • In a bowl, crack the eggs, add a pinch of salt and 1 tablespoon of yogurt. Mix well.
  2. Assemble the Dish:
      • In an oven-safe baking dish, place a tortilla on the bottom.
      • Sprinkle a layer of grated cheese, then salami, then a few spoonfuls of the egg mixture.
      • Repeat the layering: tortilla → cheese → salami → egg, until you've used all the ingredients.
      • Finish with a final layer of cheese and a sprinkle of oregano on top.
  3. Bake:
      • Place the dish in a preheated oven at 200°C (392°F).
      • Bake for 15–20 minutes, or until the top is nicely golden and bubbly.
