Cheesy Chicken Roll-Ups with Garlic Sauce | Rulouri de pui cu brânză și sos de usturoi

Ingredients
  • 2 pieces of chicken breast
  • Bay leaf
  • Rosemary
  • Salt (to taste)
  • 1 large onion (finely chopped)
  • 3 cloves of garlic (finely chopped)
  • 2-3 tablespoons olive oil (or any oil of your choice)
  • 1 capia pepper (or any kind of pepper, chopped)
  • 3-4 ladles of chicken breast soup (from cooking the chicken)
  • Salt, black pepper, and sweet paprika (to taste)
  • 1 tablespoon tomato paste
  • 1 small can of corn (optional)
  • 1 tablespoon cream cheese
  • Cheddar cheese (grated, to taste)
  • Lipia (small tortillas or flatbread, soaked in sauce, optional)
Instructions
  1. Cook the Chicken Breast
    1. Place the chicken breast in a pot with cold water, adding bay leaf, rosemary, and salt.
    2. Let it boil until the chicken is cooked through, then set the chicken aside.
  2. Prepare the Sauce
    1. In a well-heated pan, add 2-3 tablespoons of olive oil.
    2. Cook 1 large chopped onion for 2-3 minutes until softened.
    3. Add 3 cloves of finely chopped garlic and 1 chopped capia pepper (or any type of pepper) to the pan and cook for another minute.
    4. Pour 3-4 ladles of the chicken breast soup into the pan with the vegetables.
    5. Season with salt, black pepper, and sweet paprika, then add 1 tablespoon of tomato paste.
    6. Let the mixture cook for 2 minutes, and then add 1 small can of corn (if using). Stir well.
    7. Add the cooked chicken breast to a blender, blend it into smaller pieces, and return it to the pan.
    8. Add 1 tablespoon of cream cheese and allow the sauce to simmer and thicken.
  3. Assemble the Roll-Ups
    1. Preheat your oven to 200°C.
    2. If using, soak lipia (or tortillas) in the sauce, then place the chicken mixture onto each piece.
    3. Grate cheddar cheese on top of the chicken mixture and tightly roll up the lipia or tortillas.
    4. Place the rolled-up chicken in a baking dish and pour the remaining sauce over the rolls.
    5. Sprinkle more cheddar cheese on top of the rolls.
  4. Bake and Serve
    1. Place the dish in the oven and bake for about 20-30 minutes or until the cheese on top is golden and bubbly.
    2. Remove from the oven and serve with garlic sauce for a creamy and flavorful dinner!
