- 2 pieces of chicken breast
- Bay leaf
- Rosemary
- Salt (to taste)
- 1 large onion (finely chopped)
- 3 cloves of garlic (finely chopped)
- 2-3 tablespoons olive oil (or any oil of your choice)
- 1 capia pepper (or any kind of pepper, chopped)
- 3-4 ladles of chicken breast soup (from cooking the chicken)
- Salt, black pepper, and sweet paprika (to taste)
- 1 tablespoon tomato paste
- 1 small can of corn (optional)
- 1 tablespoon cream cheese
- Cheddar cheese (grated, to taste)
- Lipia (small tortillas or flatbread, soaked in sauce, optional)
- Cook the Chicken Breast
- Place the chicken breast in a pot with cold water, adding bay leaf, rosemary, and salt.
- Let it boil until the chicken is cooked through, then set the chicken aside.
- Prepare the Sauce
- In a well-heated pan, add 2-3 tablespoons of olive oil.
- Cook 1 large chopped onion for 2-3 minutes until softened.
- Add 3 cloves of finely chopped garlic and 1 chopped capia pepper (or any type of pepper) to the pan and cook for another minute.
- Pour 3-4 ladles of the chicken breast soup into the pan with the vegetables.
- Season with salt, black pepper, and sweet paprika, then add 1 tablespoon of tomato paste.
- Let the mixture cook for 2 minutes, and then add 1 small can of corn (if using). Stir well.
- Add the cooked chicken breast to a blender, blend it into smaller pieces, and return it to the pan.
- Add 1 tablespoon of cream cheese and allow the sauce to simmer and thicken.
- Assemble the Roll-Ups
- Preheat your oven to 200°C.
- If using, soak lipia (or tortillas) in the sauce, then place the chicken mixture onto each piece.
- Grate cheddar cheese on top of the chicken mixture and tightly roll up the lipia or tortillas.
- Place the rolled-up chicken in a baking dish and pour the remaining sauce over the rolls.
- Sprinkle more cheddar cheese on top of the rolls.
- Bake and Serve
- Place the dish in the oven and bake for about 20-30 minutes or until the cheese on top is golden and bubbly.
- Remove from the oven and serve with garlic sauce for a creamy and flavorful dinner!
