Cauliflower Salad Recipe

Ingredients
  • 1 medium-sized cauliflower (well washed and cut into pieces)
  • 1 large onion (finely chopped)
  • Salt (to taste)
  • Black pepper (to taste)
  • For the Mayonnaise:
  • 1 raw egg yolk
  • 1 teaspoon of mustard
  • 200 milliliters of oil (adjust to preference)
Instructions
  1. Prepare the Cauliflower:
    • Cut the washed cauliflower into florets.
    • Place the cauliflower in cold water, add salt, and bring it to a boil.
    • Let it cook until tender (check by inserting a fork), then drain and let it cool completely.
  2. Chop the Onion:
    • Finely chop the large onion, or use an electric chopper for convenience.
  3. Make the Mayonnaise:
    • In a bowl, combine 1 raw egg yolk with 1 teaspoon of mustard.
    • Gradually add 200-250 ml of oil, whisking continuously until you achieve the desired consistency.
  4. Assemble the Salad:
    • Once the cauliflower has cooled, chop it into smaller pieces if necessary.
    • In a large bowl, mix the chopped cauliflower, mayonnaise, chopped onion, 1 teaspoon of salt, and black pepper to taste.
  5. Serve:
    • Mix everything well and serve the salad cold. It’s even better the next day!
