Boiled Papanasi with Sweet Goat Cheese and Walnuts | Papanasi fierti cu brânză dulce de capră și nuci
Ingredients
For the breadcrumbs and walnut mixture:
2tbsp butter
100g breadcrumbs
80g ground walnuts
3tbsp sugar
For the cheese mixture:
500g sweet goat cheese (crumbled with a fork)
2 large eggs (or 3 smaller ones)
1/2tsp salt
1tsp lemon zest
2tbsp sugar
1tbsp vanilla
4tbsp semolina
4tbsp flour
For boiling:
Salted water (for boiling the papanas)

Prepare the Breadcrumbs and Walnuts
In a well-heated pan, melt 2 tablespoons of butter.
Add 100 grams of breadcrumbs to the pan and roast for a few minutes until they change color.
Stir in 80 grams of ground walnuts and 3 tablespoons of sugar. Continue to cook for another 2-3 minutes until well combined. Remove from heat and set aside.

Prepare the Cheese Mixture
In a large bowl, crumble 500 grams of sweet goat cheese using a fork.
Add 2 large eggs (or 3 smaller ones), 1/2 teaspoon of salt, 1 teaspoon of lemon zest, 2 tablespoons of sugar, and 1 tablespoon of vanilla. Mix everything together thoroughly.
Gradually add 4 tablespoons of semolina and 4 tablespoons of flour to the mixture. Stir until the dough comes together.

Chill the Dough
Place the dough in the fridge for about 30 minutes or until it has firmed up and is easier to work with.

Form the Papanas
Wet your hands and take portions of the dough, forming them into small balls, neither too large nor too small.
Carefully drop the balls into a pot of salted boiling water. Cook the papayas until they rise to the surface, which should take about 5-7 minutes.

Serve
Once the papayas are boiled and have floated to the top, remove them from the water and place them on a plate.
Pour the prepared breadcrumbs and walnut mixture over the papanas, and serve!
