A soft, creamy, and fruity cake made with mascarpone cheese and fresh blueberries — simple to prepare and perfect for any occasion.
In a large bowl, mix the mascarpone with a spoon until smooth.
Add eggs, butter, salt, and vanilla extract. Mix well (hand whisk or mixer).
Stir in sugar, then gradually add baking powder and flour in two stages to avoid lumps.
If the batter seems too thick, add 2–3 tbsp of milk.
Grease a 35x25 cm oven tray with butter or line it with baking paper.
Pour in the batter and spread evenly.
