Bean Salad Recipe

Ingredients
    Main Ingredients:
  • 200 grams of green beans (frozen or fresh)
  • 2 eggs
  • ½ red onion, finely chopped
  • 1 raw egg yolk
  • 2 hard-boiled egg yolks
  • 1 tablespoon of prepared mayonnaise
  • 200 milliliters of oil (for the mayonnaise)
  • Salt (to taste)
  • Black pepper (to taste)
  • 1 clove of garlic, grated
Instructions
  1. Prepare the Beans:
    • In a saucepan, bring water to a boil and add a pinch of salt.
    • Add 200 grams of green beans to the boiling water.
    • Use frozen or fresh beans as preferred.
  2. Boil the Eggs:
    • In another saucepan, bring water to a boil.
    • Add two eggs and boil until the yolks are firm
  3. Prepare the Red Onion:
    • Finely chop ½ a red onion.
    • If red onions are not available, use any onion of your choice.
  4. Cool and Peel the Eggs:
    • Once the eggs are boiled, transfer them to a bowl of cold water and let them sit for a few minutes.
    • Peel the eggs easily by cracking the shells and removing them.
  5. Make the Mayonnaise:
    • Crush the yolks of the two boiled eggs with your fingers in a bowl.
    • Add a raw egg yolk to the bowl.
    • Mix in 1 tablespoon of prepared mayonnaise.
    • Gradually incorporate 200 milliliters of oil into the yolks, mixing slowly to create a smooth mayonnaise. A mixer can be used for this step for easier mixing
  6. Drain and Chop the Beans:
    • Drain the cooked green beans and let them cool.
    • Once cooled, chop the beans into small pieces.
  7. Assemble the Salad:
    • In a large bowl, combine the chopped green beans, finely chopped red onion, and the homemade mayonnaise.
    • Season with salt and a little black pepper to taste.
    • Mix everything well to ensure even coating of the mayonnaise.
  8. Final Touch:

    Grate a clove of garlic into the salad and mix again.
