Baked Potatoes with Smoked Sausage, Feta, and Tomatoes – Perfect Breakfast!
A delicious and easy-to-make breakfast with crispy baked potatoes, smoked sausage, and fresh toppings like feta cheese and tomatoes. This dish is packed with flavor and is perfect for starting your day.
Ingredients
4 medium-sized potatoes, cubed (you can peel them if you prefer)
Water, enough to cover the potatoes for boiling
1 teaspoon salt (for boiling)
1 tablespoon olive oil
1 teaspoon butter
3 tomatoes, sliced
Smoked sausage (caizer), or you can use bacon, salami, or parizer
1 teaspoon salt, for seasoning
Black pepper, to taste
1 teaspoon sweet paprika
Fresh dill and parsley, for garnish
2 handfuls of feta cheese, crumbled
2 tablespoons of grated cheddar cheese (optional, for extra flavor)
Instructions
Prepare the Potatoes:
Wash and cube the potatoes (you can peel them if you like).
Place the cubed potatoes in a pot, add enough water to cover them, and stir in 1 teaspoon of salt.
Bring to a boil and cook for about 10 minutes, until they are slightly tender but not fully cooked.
Fry the Potatoes:
In a large skillet, heat 1 tablespoon olive oil and 1 teaspoon butter over medium heat.
Add the partially cooked potatoes and fry until they are golden and crispy, stirring occasionally.
Prepare the Toppings:
While the potatoes are frying, slice the tomatoes and set them aside for later.
Chop the smoked sausage (caizer) into thin slices. If you don’t have caizer, feel free to use bacon, salami, or parizer.
Season the Potatoes:
Once the potatoes are fried, season them with salt, pepper, and sweet paprika.
Stir in some fresh dill and parsley for added flavor.
Cook the Smoked Sausage:
In the same skillet used for frying the potatoes, add 1 teaspoon of oil and sauté the smoked sausage (caizer) for 1-2 minutes until it gets a nice color.
Assemble the Dish:
Preheat the oven to 200°C (392°F).
Layer the fried potatoes on a baking dish.
Top with smoked sausage, sliced tomatoes, and crumbled feta cheese.
Sprinkle with grated cheddar cheese if desired.
Bake:
Place the dish in the oven and bake for 10-15 minutes or until everything is well-heated and the cheese is melted and slightly golden.
Serve:
Garnish with more fresh dill or parsley before serving.
