A large, moist apple cake perfect for fasting days. Sweetened naturally with apples and lightly flavored with citrus, this tray-bake is easy to make and ideal for the whole family.
Wash, peel, and grate the apples.
Place the grated apples in a pan over medium heat.
Cook just until the juice evaporates, keeping the apple texture intact (do not mash).
Sprinkle 2 tablespoons of sugar over the apples.
In a large bowl, combine:
Orange juice
Oil
Sugar
Vanilla essence
Lemon peel
Salt
Mix well.
Gradually add baking powder and flour in batches.
Stir until smooth and lump-free.
Line a large oven-resistant tray with baking paper.
Pour 3/4 of the sponge cake batter into the tray.
Spread the prepared apples evenly on top of the batter.
Optionally, gently cover the apples with the remaining batter or leave them visible.
Preheat the oven to 180°C (356°F).
Place the tray in the oven and bake until a toothpick inserted in the center comes out clean (approx. 45–60 minutes depending on oven).
